Ingredients:
4 x 200 g (7oz) salmon steaks
1 tablespoon olive oil
For the fresh basil sauce:
45 g (1 ½ oz) fresh basil
1 tablespoon freshly squeezed lemon juice
6 tablespoons olive oil
Salt and freshly ground pepper
Method:
First of all make the sauce. Set aside 4 sprigs of the basil for garnish.
Remove any large stalks from the remainder and place it into a food processor
with the lemon juice and a little salt and pepper. Turn on the machine and
once the basil has blended to a paste, very slowly pout in the olive oil.
Check the sauce for seasoning and set to one side.
Brush the salmon steaks on both sides with a little olive oil and season with
some salt and black pepper. Barbecue over medium-hot coals for 4-5 minutes on
each side until golden on the outside but still moist and juicy in the
centre. Serve with the fresh basil sauce and plenty of sparkling white wine.
Go on then, champagne all round!
